Recipe Share: No-Brainer Corn Salad

IT’S SUMMER, YO! Which means it’s salad season! All those farm-fresh veggies are just begging to be devoured and while I adore a good leafy greens and vinegar dressing salad, sometimes I am craving something a little different. This gorgeous easy-peasy sweet corn salad is a fav staple year-round, but it’s especially good this time of year when the local farms have an abundance of the good stuff.

Check it. Basically the rule of thumb is: grill your corn(husk on so it blisters but doesn’t burn), add some acid, some heat, a bit of crunch, a little oil, a crumbly cheese if you want it, and some herbs. Boomzers! A tasty snack to accompany any summer activity, be it a backyard potluck or river float.

A personal fav version of this features toasted pepitas, lime, and cotija cheese, plus the millennial addition of some fresh slices of avocado!
